Pannekoeken for breakfast Previous Next Bette Cosgrove Every trip we make a breakfast fruits pancake. Usually apple pannekoeken. You need: Your favourite pancake mix: We often get the great pannekoeken mix from De Moelen, Foxton whenever we pass by and keep it permanently in a sealed container in our campervan. Or grab the Edmonds buttermilk or gluten-free shake-up pancake mix from supermarket. You can be flexible and add milk (or alternative milks like oat, soy, rice, coconut, or almond) or just use water. Check the pancake-mix container for how much liquid you need. If we have fresh eggs (free-range, bought along the way) we add one. Beat or shake up until well mixed. Slice in one fresh apple / pear cut in tiny pieces; or mashed banana; or berries if you have them. Mix your fruit of choice in, but just lightly. Make one, full-pan-sized fruit pancake per person: fill the pan with mixture. We use a small non-stick pan with a lid on our single ring gas burner as it's easy to wipe clean when done. Flip when bubbles appear and put a lid on when cooking the second side. We usually have coconut yoghurt in our fridge to serve with this, or open a tin of reduced cream if you have it. We weren't outside the van long as I forgot the insect repellent and the sandflies quickly found us! There is a free DOC camping area at the carpark and toilets. No dogs. Lots of curious birds, and bird/animal noises in the dark of night. There are picnic tables and fire drums to light, which may help to keep away the ever-hungry sandflies. Easy access, there are level sites right on the shore of the lake where you can watch water skiers and the wild life or, if you are brave, go for swim. There are also kayaks available to use. A great mountain bike track, or bush walk, is right on the boundary of the park. The park is picturesque with loads of native trees and both powered and non-powered sites that are a generous size for the biggest of rigs. They have good clean facilities complete with herb garden, and room for large groups with their own separate kitchen. This would be a great spot for family reunions and the like. Its a DOC campsite with long drop toilets, water taps, and fire pits. Nothing like falling asleep to the sound of waves crashing on the beach. Getting there, there’s about 20 minutes of gravel road with a few cattle crossings; nothing too steep. There were a few other caravans parked up. Just be aware the grass can be quite muddy. For this particular DOC camp site you can book online in advance or pay on arrival by bringing exact change. We saw tons of playful seals and heaps of brave surfers too! 10/10. Catlins, Southland. 3 Autumn 2023 BUY AUTHOR INDEX AUTHORS Click on image for full view and caption for me, it's about the senses Why do I love camping so much? Linda Butler For me it's not the destination; yet we live in such an amazing country. So close to rivers, tall mountains, sea, the wild bush, the cities and the vast, open fields. It's not the company; and I've met some amazing, interesting characters over the years. For me, it's about the senses For me, it's about the senses. Feeling the breeze, smelling the salt air. The warmth of the sun as it's rises on a crispy cool morning. It's about listening to bird song, soaking up the visual beauty surrounding me. Its about walking in that light, gentle rain or listening to the sound of water talking to us as the currents push it on its way. This revitalizes me, refreshes me. It's about taking in the creativity we see along the way — a fancy letterbox, painted artwork on a barn wall, bras hanging on a fence and oh, so much more. Whatever takes you on the road, may you see or hear something new this year, and make a new friend along the way. Photo: Moon over Lake Ohau ©2023 M Richardson Up Up 3 Autumn 2023 , p 10
