  • summer-22, pannekoeken

2 Summer 2022 Summer 2022 ISSUE 2 CONTENTS PDF BUY Up Pannekoeken for breakfast Bette Cosgrove Up Every trip we make a breakfast fruits pancake. Usually apple pannekoeken. You need: Your favourite pancake mix: We often get the great pannekoeken mix from De Moelen, Foxton whenever we pass by and keep it permanently in a sealed container in our campervan. Or grab the Edmonds buttermilk or gluten-free shake-up pancake mix from supermarket. You can be flexible and add milk (or alternative milks like oat, soy, rice, coconut, or almond) or just use water. Check the pancake-mix container for how much liquid you need. If we have fresh eggs (free-range, bought along the way) we add one. Beat or shake up until well mixed. Slice in one fresh apple / pear cut in tiny pieces; or mashed banana; or berries if you have them. Mix your fruit of choice in, but just lightly. Make one, full-pan-sized fruit pancake per person: fill the pan with mixture. We use a small non-stick pan with a lid on our single ring gas burner as it's easy to wipe clean when done. Flip when bubbles appear and put a lid on when cooking the second side. We usually have coconut yoghurt in our fridge to serve with this, or open a tin of reduced cream if you have it. This little postcard scene looks like a tropical paradise, balmy and serene — at the time the alpine passes were snowed closed throughout the rest of the island, evidence of how really exceptional this idyllic piece of coast is. Danseys Pass Margaret Earle Danseys Pass While we were exploring the geosites in the Waitaki Valley, we saw several signs to Danseys Pass. My partner, Graham, commented that he’d read about the pass but had never been over it. So we decided to take a detour to have a look at the beginning of the pass. Of course, we couldn’t resist it and headed through the pass towards Naseby. The pass is not too high but the road is not suitable for towing. The scenery is spectacular with an awesome sense of remoteness. But don’t take a caravan or large vehicle over it. ©2024 Margaret Earle Up Up 10 summer 2024 , p 13

The Aratiatia Dam Miriam Richardson This is a magical free stopover in a humble carpark. In winter, at 10am, noon and 2pm, they release the water from the lake to fill the Aratiatia Rapids. It is spectacular. The carpark fills in the hour before the release, so time your arrival well outside of these times so you can get a suitable park. Its not particularly flat, so more choice is better. There are lovely walks and a cycle track along the lake. aratiatiarapids.co.nz It is breathtaking watching the water fill the rapids.
